Mayonaise and chutney chicken (vra-na-meer-hoender)
Mayonnaise and chutney may sound like an unusual combination for a chicken casserole, but this saucy, flavoursome dish is much-loved in South Africa. It never fails to increase the appetite of your guests, who will invariably ask for more chicken, or, as we say in Afrikaans, "vra na meer hoender".
Serves 4 to 6
Ingredients
Our additive-free, healthier recipe

- 6 to 8 chicken portions, or a whole chicken (the cooking time will be longer)
- 1 onion, finely chopped
- 2 cloves of chopped garlic
- 1 teaspoon Worcester sauce
- ¾ to 1 cup chutney
- ½ cup mayonnaise
- ¼ cup water
- Salt and freshly ground black pepper
Original recipe:
- 6 to 8 chicken portions
- 1 packet brown onion soup powder or 1 onion, chopped
- 1 cup boiling water
- 1 cup chutney
- 1 cup mayonnaise
- Salt and pepper
Method
- Pre-heat oven to 160°C
- Season the chicken with salt and pepper and put in oven-proof casserole dish.
- If using a fresh onion, sauté gently for 10 to 15 minutes until the onions are soft and has a golden colour. Do not burn it. Add ¼ cup water, chopped garlic and Worcester sauce.
- If using onion soup powder, mix soup powder and boiling water.
- Mix onion with chutney and mayonnaise, and pour sauce over chicken.
- Cover casserole dish and bake in oven at 160°C for 1½ hours if you used chicken portions, or 2 to 2 ½ hours if it's a whole chicken.
Serve with rice and fresh, mixed salad.

I've made it with Apricot jam before, and it's just as good! Nice variation for us South Africans living abroad --where Mrs.Balls Chutney isn't available!! :)

Tried this last night for the first time on my two Teen boys and it was a hit - they licked the plates clean!
I can picture them in my mind'd eye, Paola! Our daughter is inclined to lick the plates too ;-)
It seems that there are many ways to make variations of this dish. This one might not be so healthy, but a friend told me today her favourite is to use 1 cup mayo, 1 cup chutney and 1 cup coke as sauce which is basted during the cooking process
This was my Mom's go to dish for Sunday lunch while I was growing up. Sometimes she used chutney and other times she used apricot jam. I always make it when I feel homesick and need some comfort food here in Taiwan.

Rina's variation on this recipe:
Season chicken portions and brown (in a bit of oil)
Place in dish
Saute 2 chopped onions and brown the onions.
Spoon over chicken
Mix together:
1/4 cup (60 ml) chutney
1/4 cup mayonnaise
1/4 cup tomato sauce
2 tablespoons honey or syrup
2 tablespoons sweet chili sauce
2 tablespoons soy sauce
Combine and pour over chicken and onions.
Bake in a covered casserole dish for 30 minutes by 180C.
Remove lid and bake for an extra 10 - 15 minutes
